TODDLER MEAL IDEAS & RECIPES
HEALTHY SMASH CAKE
Since we’re all about health in our household, I wanted to make a smash cake Santino could enjoy without getting a sugar rush or upset stomach! He doesn’t eat added sugar on a daily basis, so I was worried his little tummy wouldn’t enjoy digesting the store-bought sugary frostings. So… here is a recipe for a HEALTHY “CAKE”!
It’s technically a French yogurt cake without the sugar.
For the “CAKE”
1 cup flour
1/2 cup coconut oil
2 eggs
2 tsp baking powder
3/4 cup Greek yogurt (whole milk)
1 tsp vanilla yogurt
Lemon & orange zest to your liking
*mix all the ingredients together EXCEPT the flour. Once all are there ingredients are mixed pulled in the flower until you get a good consistency (it should be a little thicker than a typical cake batter, but not like cookie dough)
*pour batter into a loaf pan, and bake at 3:50 for approximately 50 minutes or until the top browns.
*use a round cookie cut-out to cut the loaf into small cake like shape
For the “FROSTING”
8 oz cream cheese
1 tsp vanilla
1/2 cup Greek or coconut yogurt
*mix together in bowl until fluffy
NOTES
*this does not come out as your typical fluffy vanilla cake. It is yogurt based- so it is more dense.
*the frosting taste more like cream cheese than icing
*you can top with any fruit of your choice for decoration
